Pancake Breakfast





Pancake Morning

I've been craving pancakes lately, and I mean craving, if I were a pregnant women these pancakes would be my pickles-and-icecream equivalent. 

I don't know what it is about sunday mornings but they require a big breakfast and since sundays are my day off what better thing to do then grab a sister, some flour, and a handful of tunes to dance to? 

(A: nothing better)

Cow's Milk. Damn.

We spent last night at a friends house watching Supernatural reruns til almost three in the morning and lucky for us (me) my best friend keeps gluten-free flour on hand for pancake emergencies. 

Almond milk was a bit of a stretch though so we went with cows milk and applesauce, since we were short of milk to begin with. I wasn't too happy about it but it came out alright.

Pancakes are worth stomach grumbles.

Lily came in to knock out the flipping of the pancakes since she can get her cakes air borne and back in the pan to boot. I tried flipping the last one, with a spatula, and it came out... edible. At least I didn't burn it!

The chocolate chip sprinkling was the hard part

Lily burnt her first one.

Since we sub'd the recipe with applesauce to counter the lack of milk I went ahead and added vanilla and cinnamon to the batter. Lily's maniacal mind came up with the idea to add chocolate chips. 

Pure evil genius. I took the idea and ran with it of course and the chocolate chip to batter ratio sky rocketed when Lil let me sprinkle them in.

Maple Syrup, Apple Butter, and Butter. 







As a rule dairy is a bad idea for a dairy-allergy but butter is a different animal. I make no excuses, I just like butter, so regardless of allergies I still use butter in my recipes and to cook my eggs. 

I've tried some of the vegan butter substitutes (Earth Balance is a good one) but I don't like the oily taste they lend to things.

It's less of an issue in baking then with eggs though, which is enough reason for me to pick some up from the store, but I have also been hearing wonders about coconut oil from a vegan friend. So that maybe the next splurge in cooking extras. 

Bless vegan friends, they always have cool suggestions.
